Why Add a Wind Block to a Santa Maria Grill?
When most people think of a wind block, they simply imagine something that blocks the wind. In reality, a properly designed wind block does much more. It improves cooking performance, increases fuel efficiency, stabilizes cooking temperatures, and helps create a cleaner, safer grilling environment.
At JD Fabrications, our wind blocks are designed to enclose the back of the grill and extend halfway down each side, stopping at the grate guide assemblies. This design provides excellent protection while maintaining full access to the adjustable cooking grate.

One of the biggest advantages of a wind block is its ability to improve heat retention and create a more stable cooking environment.
Without a wind block, wind can blow underneath the cooking grate, carrying valuable heat away from the fire before it reaches your food. Changing wind conditions also cause cooking temperatures to fluctuate, making it more difficult to maintain consistent cooking temperatures throughout your cook.
A wind block shields the fire from crosswinds and funnels hot air upward through the cooking grate where it is most effective. Instead of allowing heat to escape out the back of the grill or be blown away underneath the grate, more of that heat is directed toward your food.
By removing much of the wind's influence, the fire burns more consistently, creating a more stable cooking temperature and giving you greater control over the cooking process. Because less heat is lost, you'll often burn less wood or charcoal to achieve the same cooking results, reducing fuel consumption while extending your cooking time.
For Santa Maria grills equipped with an upper warming or secondary cooking grate, the concentrated rising heat also increases temperatures at the upper grate, making it more effective for warming food, slow cooking, resting meat, or toasting.

They can be installed when needed and removed in minutes. Once removed, the panels store flat, making them easy to transport or store without taking up valuable space.

A removable wind block is one of the most effective upgrades you can add to a Santa Maria grill. By funneling heat upward through the cooking grate, preventing wind from carrying heat away, stabilizing cooking temperatures, reducing fuel consumption, increasing heat to upper warming grates, minimizing flying ash and embers, and protecting surrounding areas from grease splatter, it improves both the performance and enjoyment of cooking over wood or charcoal.
